Description

High Protein Mediterranean Chicken is a flavorful and nutritious dish, perfect for impressing guests or enjoying a family meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp fresh oregano, chopped
  • 3 tbsp lemon juice (freshly squeezed)
  • 4 garlic cloves, minced
  • 3 tbsp extra virgin olive oil
  • 1 cup cherry tomatoes, halved
  • 1 medium red onion, cut into wedges
  • 1/2 cup crumbled feta cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
  3. On a baking sheet lined with parchment paper, arrange the marinated chicken with cherry tomatoes and red onion wedges. Drizzle remaining marinade over the top.
  4. Roast for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  5. Sprinkle crumbled feta on top and return to the oven for an additional 5 minutes until slightly softened.
  6. Let rest briefly before serving alongside a salad or bread to soak up the juices.
