  • 1 cup graham cracker crumbs
  • 5 tbsp unsalted butter, melted
  • 1/4 cup granulated sugar (for crust)
  • 8 oz feta cheese, crumbled
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 3 large eggs
  • 1/2 cup granulated sugar (for filling)
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix graham cracker crumbs with melted butter and 1/4 cup sugar; press into the bottom of a springform pan.
  3. In a bowl, blend feta and cream cheese until smooth; then add sour cream, eggs, 1/2 cup sugar, and vanilla extract until fully combined.
  4. Pour the filling over the crust and smooth out the top.
  5. Bake for 45-50 minutes or until slightly jiggly in the center. Cool at room temperature, then refrigerate for at least four hours.
