  • 1 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 2 cups of your favorite ice cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan.
  2. In a bowl, whisk together cocoa powder, granulated sugar, brown sugar, flour, and salt.
  3. In another bowl, beat eggs and vanilla extract until frothy. Combine with dry ingredients until just mixed.
  4. Spread batter in the prepared pan and bake for 20-25 minutes or until a toothpick comes out with moist crumbs. Let cool completely.
  5. Scoop generous amounts of ice cream onto half of the brownie squares, topping with another square to create sandwiches.
  6. Freeze for at least one hour before serving.
