  • 1 lb lean ground beef
  • 12 oz cheese tortellini (fresh or frozen)
  • 2 cups enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ½ cup sour cream
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 tsp cumin
  • 2 tsp chili powder
  • Fresh cilantro for garnish

Instructions

  1. Cook the tortellini according to package instructions until al dente; drain and keep warm.
  2. In a skillet over medium heat, sauté the diced onions and bell peppers in olive oil until soft (about 5 minutes).
  3. Add the ground beef, seasoning with cumin, chili powder, salt, and pepper; cook until browned.
  4. Stir in the enchilada sauce and combine with the beef mixture; then add the cooked tortellini.
  5. Preheat the oven to 350°F (175°C). In a greased baking dish, layer half of the mixture and half of the shredded cheese; repeat layers.
  6. Cover with foil and bake for about 20 minutes; remove foil for the last 5 minutes to brown the cheese.
  7. Serve drizzled with sour cream and garnished with cilantro.
