- 12 oz cheese tortellini (fresh or frozen)
- 2 cups enchilada sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- ½ cup sour cream
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 tsp cumin
- 2 tsp chili powder
- Fresh cilantro for garnish
Instructions
- Cook the tortellini according to package instructions until al dente; drain and keep warm.
- In a skillet over medium heat, sauté the diced onions and bell peppers in olive oil until soft (about 5 minutes).
- Add the ground beef, seasoning with cumin, chili powder, salt, and pepper; cook until browned.
- Stir in the enchilada sauce and combine with the beef mixture; then add the cooked tortellini.
- Preheat the oven to 350°F (175°C). In a greased baking dish, layer half of the mixture and half of the shredded cheese; repeat layers.
- Cover with foil and bake for about 20 minutes; remove foil for the last 5 minutes to brown the cheese.
- Serve drizzled with sour cream and garnished with cilantro.
