- 20 Biscoff cookies, crushed
- 5 tbsp unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 cup heavy cream
- 1/2 cup Biscoff spread
- Additional crushed Biscoff cookies for topping
Instructions
- Preheat oven to 350°F (175°C). In a bowl, combine crushed Biscoff cookies and melted butter until moistened.
- Press mixture into the bottom of a springform pan to form the crust. Bake for 10 minutes, then cool completely.
- In a mixing bowl, beat softened cream cheese and powdered sugar until smooth. In another bowl, whip heavy cream to soft peaks and fold into the cream cheese mixture.
- Spread half of the cheesecake filling over the cooled crust. Drizzle with Biscoff spread, then top with remaining filling.
- Cover and refrigerate for at least four hours or overnight before serving. Garnish with crushed Biscoff cookies before slicing.
