  • 20 Biscoff cookies, crushed
  • 5 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy cream
  • 1/2 cup Biscoff spread
  • Additional crushed Biscoff cookies for topping

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine crushed Biscoff cookies and melted butter until moistened.
  2. Press mixture into the bottom of a springform pan to form the crust. Bake for 10 minutes, then cool completely.
  3. In a mixing bowl, beat softened cream cheese and powdered sugar until smooth. In another bowl, whip heavy cream to soft peaks and fold into the cream cheese mixture.
  4. Spread half of the cheesecake filling over the cooled crust. Drizzle with Biscoff spread, then top with remaining filling.
  5. Cover and refrigerate for at least four hours or overnight before serving. Garnish with crushed Biscoff cookies before slicing.
