Description

  • 12 fresh oysters
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup grated Gruyère cheese
  • 1/4 teaspoon nutmeg (freshly grated if possible)
  • 1/2 cup breadcrumbs (preferably panko)
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Carefully shuck the oysters and arrange them on a baking sheet.
  2. In a saucepan, melt the butter over medium heat. Whisk in the flour until smooth, cooking for about two minutes.
  3. Gradually add the milk while whisking continuously, cooking until thickened (about five minutes).
  4. Stir in the Gruyère cheese until melted, then season with salt, pepper, and nutmeg.
  5. Gently fold in the oysters until coated in the sauce. Spoon back into oyster shells.
