  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tbsp olive oil
  • 4 cloves fresh garlic, minced
  • 1 medium yellow onion, chopped
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tbsp Italian seasoning
  • 8 oz lasagna noodles (broken or whole)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Season chicken breasts with salt and pepper; sear until golden brown (about 5 minutes per side). Remove and set aside.
  2. In the same pot, sauté onions, garlic, carrots, and celery for about 5 minutes until softened.
  3. Add chicken broth and Italian seasoning; return the chicken to the pot. Bring to a gentle boil then reduce heat and simmer for 10 minutes.
  4. Shred the chicken using two forks; return to the pot along with heavy cream and broken lasagna noodles.
  5. Simmer for another 10 minutes until noodles are tender but not mushy. Adjust seasonings as needed before serving.
