  • 1 cup shrimp (peeled and deveined)
  • 1 cup clams (fresh or canned)
  • 1 cup white fish (like cod, cut into bite-sized pieces)
  • 2 medium russet potatoes (peeled and diced)
  • 1 cup heavy cream
  • 4 slices thick-cut bacon (diced)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 4 cups fish stock or broth
  • 1 tsp fresh parsley (chopped)
  • 1 tsp fresh thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook diced bacon over medium heat until crispy. Remove bacon bits and set aside.
  2. In the same pot, sauté chopped onion and minced garlic until fragrant, about 5 minutes.
  3. Add diced potatoes and fish stock; bring to a boil. Reduce heat and simmer until potatoes are tender, approximately 15 minutes.
  4. Stir in heavy cream gently until well combined.
  5. Fold in shrimp, clams, and white fish; cook until shrimp turns pink and fish flakes easily, about 5-7 minutes.
  6. Season with salt, pepper, parsley, and thyme to taste before serving.
