  • 1 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 3 large eggs
  • ½ cup unsalted butter, melted
  • ½ cup brewed espresso or strong coffee
  • 1 cup mascarpone cheese
  • Cocoa powder for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper.
  2. In a large bowl, combine melted butter and cocoa powder until smooth. Whisk in sugar, then add eggs one at a time.
  3. Gradually sift in flour and fold gently until just combined.
  4. Pour batter into the prepared pan and bake for 25-30 minutes until a toothpick comes out with moist crumbs.
  5. While baking, whip mascarpone cheese with espresso and sugar until smooth.
  6. Spread the mascarpone mixture over cooled brownies, dust with cocoa powder, and refrigerate for at least an hour before slicing.
