- 1 cup sour cream

- 1 cup fresh figs, halved
- 1/2 cup honey
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
Instructions
- Preheat oven to 400°F (200°C). Place fig halves on a lined baking sheet and drizzle with honey. Roast for 15 minutes until caramelized.
- Combine graham cracker crumbs and melted butter in a bowl. Press into the bottom of a springform pan. Bake at 350°F (175°C) for 10 minutes.
- In a mixing bowl, blend cream cheese and sugar until smooth. Add sour cream and vanilla; mix well.
- Beat in eggs one at a time until just combined. Fold in half of the roasted figs gently.
- Pour filling over crust and bake at 325°F (160°C) for 50-60 minutes or until slightly jiggly in the center. Cool completely before refrigerating overnight.
