  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup white chocolate chips
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 3/4 cup granulated sugar
  • 1 cup fresh raspberries
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter; press mixture into the bottom of a springform pan.
  2. Melt white chocolate chips in a microwave-safe bowl until smooth; let cool slightly.
  3. In a mixing bowl, beat cream cheese and sugar until fluffy; mix in sour cream, vanilla extract, and melted white chocolate until smooth.
  4. Gently fold in half of the raspberries; pour filling over the crust and scatter remaining raspberries on top.
  5. Bake for 55-60 minutes until the center is slightly jiggly. Cool at room temperature before chilling in the fridge for at least four hours.
