  • 8 oz fettuccine pasta
  • 2 salmon fillets (6 oz each)
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 2 tbsp fresh dill or parsley, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Cook the fettuccine in salted boiling water until al dente (about 8-10 minutes). Reserve ½ cup of pasta water, then drain.
  2. In a large skillet over medium heat, warm olive oil. Season salmon fillets with salt and pepper; cook skin-side down for about 4 minutes per side until golden brown and flaky. Remove from skillet.
  3. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  4. Pour in heavy cream and lemon juice; bring to a gentle simmer. Gradually whisk in Parmesan cheese until melted and smooth.
  5. Add drained pasta to the skillet along with reserved pasta water to coat evenly. Flake salmon into bite-sized pieces and gently fold into the mixture.
  6. Garnish with chopped herbs before serving.
