- 8 oz fettuccine or penne pasta
- 2 salmon fillets (about 6 oz each)
- 1 cup heavy cream
- 3 cloves garlic, minced
- 2 tbsp freshly squeezed lemon juice
- 2 cups fresh spinach
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions in salted water until al dente. Reserve some pasta water before draining.
- In a skillet over medium heat, season salmon fillets with salt and pepper and sear skin-side down for 4-5 minutes per side until cooked through. Remove from pan.
- In the same skillet, sauté minced garlic until fragrant. Add heavy cream and simmer while stirring.
- Incorporate lemon juice and Parmesan cheese into the sauce until smooth. Adjust thickness with reserved pasta water if needed.
- Flake the salmon into bite-sized pieces, add to the skillet along with cooked pasta and spinach. Toss gently to combine.
- Serve warm, garnished with additional Parmesan if desired.
