  • 1 cup strong brewed espresso (cooled)
  • 24 ladyfingers
  • 1 cup mascarpone cheese
  • 1/2 cup granulated sugar
  • 1 cup heavy cream
  • 2 tbsp unsweetened cocoa powder
  • Optional: 2 tbsp dark rum or Marsala wine

Instructions

  1. Brew the espresso and let it cool to room temperature.
  2. In a mixing bowl, combine mascarpone cheese and sugar; blend until smooth.
  3. In another bowl, whip heavy cream until stiff peaks form, then gently fold it into the mascarpone mixture.
  4. Quickly dip each ladyfinger into the cooled espresso and layer half in a baking dish.
  5. Spread half of the mascarpone mixture over the ladyfingers. Repeat with remaining ladyfingers and mascarpone.
  6. Cover and refrigerate for at least four hours or overnight.
  7. Before serving, dust with cocoa powder.
