  • 1 cup pumpkin puree (canned or fresh)
  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter (melted)
  • 1/2 cup brown sugar (light)
  • 1/2 cup chopped pecans (toasted)
  • 2 cups mini marshmallows
  • 2 large eggs
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a bowl, mix graham cracker crumbs, melted butter, and brown sugar until it resembles wet sand. Press firmly into the baking dish to form the crust.
  3. In another bowl, whisk together pumpkin puree, eggs, spices, remaining sugar, and salt until smooth.
  4. Fold in chopped pecans and pour the filling over the crust. Bake for about 30 minutes until set.
  5. Sprinkle mini marshmallows on top and return to the oven until toasted golden brown.
  6. Let cool completely before slicing into bars.
