  • 1 cup apple cider (fresh)

  • 1 cup diced apples (Granny Smith or Honeycrisp)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, mix melted butter, eggs, and apple cider until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined. Fold in diced apples.
  5. Spoon batter into muffin cups about two-thirds full. Optionally sprinkle extra cinnamon on top.
  6. Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
