  • 4 medium flour tortillas
  • 3 medium apples (2 Granny Smith, 1 Fuji), peeled and sliced
  • 2 tsp ground cinnamon
  • 1/2 cup brown sugar
  • 2 tbsp butter
  • 1 tsp vanilla extract
  • 1/2 cup caramel sauce (store-bought or homemade)

Instructions

  1. Preheat oven to 350°F (175°C) and lightly coat a baking dish with nonstick spray.
  2. In a bowl, toss sliced apples with cinnamon and brown sugar until well coated.
  3. Place a spoonful of apple mixture in each tortilla, roll tightly, and place seam-side down in the baking dish.
  4. Melt butter in a saucepan over low heat and stir in vanilla extract. Drizzle over the enchiladas.
  5. Bake for 25-30 minutes until golden brown and bubbling.
