  • 8 sheets phyllo dough
  • 1 cup fresh or dried apricots, diced
  • 2 tbsp honey
  • 4 oz cream cheese, softened
  • 1 tsp ground cinnamon
  • 4 tbsp unsalted butter, melted

Instructions

  1. Preheat oven to 375°F (190°C). Grease a muffin tin with cooking spray or melted butter.
  2. Unroll phyllo dough and cover with a damp cloth. Cut into squares to fit muffin cups.
  3. Layer 3-4 sheets of phyllo in each muffin cup, brushing melted butter between layers.
  4. In a bowl, combine cream cheese, honey, and cinnamon until smooth; gently fold in apricots.
  5. Spoon filling into each phyllo cup until three-quarters full. Bake for 15-20 minutes until golden brown.
  6. Cool slightly before serving; drizzle with extra honey if desired.
