  • 1 lb shrimp (peeled and deveined)
  • 8 small corn tortillas
  • 2 cups shredded green cabbage
  • 1 ripe avocado (sliced)
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • ½ cup sour cream
  • 2 tbsp mayonnaise
  • 2 tbsp chipotle peppers in adobo sauce (finely chopped)

Instructions

  1. Rinse shrimp under cold water, pat dry, and toss with olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  2. Heat a skillet over medium-high heat and cook the shrimp for about 3-4 minutes on each side until pink and opaque.
  3. Warm corn tortillas wrapped in foil in a preheated oven at 350°F for about 10 minutes.
  4. In a bowl, mix sour cream, mayonnaise, chipotle peppers, lime juice, and salt until smooth.
  5. Assemble tacos by layering cabbage on each tortilla followed by shrimp and avocado slices; drizzle with sauce.
