  • 1 lb beef sirloin, thinly sliced
  • 8 oz cremini mushrooms, sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup sour cream
  • 2 cups low-sodium beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 2 tbsp flour
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Slice the beef against the grain into thin strips. Chop the onion and mince the garlic.
  2. In a large skillet over medium-high heat, heat olive oil and sear the beef until browned (3-4 minutes). Remove the beef from the pan.
  3. In the same skillet, add onions and cook until translucent (3-5 minutes). Add garlic and mushrooms; cook until softened.
  4. Sprinkle flour over vegetables, stirring to coat. Gradually add beef broth, Worcestershire sauce, and Dijon mustard while stirring continuously until thickened.
  5. Reduce heat to low and stir in sour cream. Return beef to skillet and simmer for a few minutes.
  6. Serve over egg noodles or rice, garnished with fresh parsley if desired.
