Instructions
- Slice the beef against the grain into thin strips. Chop the onion and mince the garlic.
- In a large skillet over medium-high heat, heat olive oil and sear the beef until browned (3-4 minutes). Remove the beef from the pan.
- In the same skillet, add onions and cook until translucent (3-5 minutes). Add garlic and mushrooms; cook until softened.
- Sprinkle flour over vegetables, stirring to coat. Gradually add beef broth, Worcestershire sauce, and Dijon mustard while stirring continuously until thickened.
- Reduce heat to low and stir in sour cream. Return beef to skillet and simmer for a few minutes.
- Serve over egg noodles or rice, garnished with fresh parsley if desired.
