  • 3 lbs boneless chuck roast
  • 4 dried guajillo chiles
  • 2 tsp cumin
  • 1 large onion, chopped (divided)
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • Fresh cilantro, chopped (for garnish)
  • 10 small corn tortillas

Instructions

  1. Trim excess fat from the chuck roast and cut it into large chunks. Season generously with salt and pepper.
  2. Soak dried guajillo chiles in boiling water for 10 minutes, then blend with half of the chopped onion and garlic until smooth.
  3. In a large pot or slow cooker, combine beef chunks with the blended chile mixture, remaining onion, garlic, cumin, and beef broth. Stir well.
  4. Cover and cook on low heat for about 3 hours (or 6 hours in a slow cooker) until the meat is fork-tender.
  5. Remove meat, shred it with two forks, and return it to the pot to soak up flavors.
  6. Lightly toast each corn tortilla in a hot skillet until pliable.
  7. Fill each tortilla generously with shredded meat and top with fresh cilantro. Serve hot alongside bowls of warm consomme for dipping.
