- 4 dried guajillo chiles
- 2 tsp cumin
- 1 large onion, chopped (divided)
- 4 cloves garlic, minced
- 4 cups beef broth
- Fresh cilantro, chopped (for garnish)
- 10 small corn tortillas
Instructions
- Trim excess fat from the chuck roast and cut it into large chunks. Season generously with salt and pepper.
- Soak dried guajillo chiles in boiling water for 10 minutes, then blend with half of the chopped onion and garlic until smooth.
- In a large pot or slow cooker, combine beef chunks with the blended chile mixture, remaining onion, garlic, cumin, and beef broth. Stir well.
- Cover and cook on low heat for about 3 hours (or 6 hours in a slow cooker) until the meat is fork-tender.
- Remove meat, shred it with two forks, and return it to the pot to soak up flavors.
- Lightly toast each corn tortilla in a hot skillet until pliable.
- Fill each tortilla generously with shredded meat and top with fresh cilantro. Serve hot alongside bowls of warm consomme for dipping.
