  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar, divided
  • 16 oz cream cheese, softened
  • 3 large eggs (room temperature)
  • 2 tsp ground cinnamon
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and 1 tablespoon of sugar. Press firmly into the bottom of the prepared dish.
  3. In a blender, blend cream cheese, remaining sugar, eggs, vanilla extract, and cinnamon until smooth.
  4. Pour the filling over the crust and smooth out any bubbles.
  5. Bake for 30-35 minutes or until set with a slight jiggle in the center.
  6. Allow cooling at room temperature then refrigerate for at least two hours before slicing.
