Instructions
- 1. Preheat oven to 350°F (175°C). Grease two round cake pans.
- 2. In a large bowl, cream butter and sugar until fluffy. Add eggs and vanilla; mix well.
- 3. Gradually incorporate flour, baking powder, and milk until just combined.
- 4. Divide batter between pans and bake for 25-30 minutes or until a toothpick comes out clean.
- 5. For pastry cream, whisk egg yolks, cornstarch, sugar, milk, and vanilla in a saucepan over medium heat until thickened. Transfer to a bowl and cover directly with plastic wrap.
- 6. For ganache, melt chocolate chips with heavy cream in a saucepan over low heat until smooth.
- 7. Once cakes are cooled, slice each layer in half if desired. Layer pastry cream between cake layers and pour ganache on top.
