  • ¾ cup granulated sugar
  • ¾ cup packed brown sugar
  • 4 large eggs
  • ½ cup bourbon
  • ½ cup unsalted butter, melted
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • 1 ½ cups all-purpose flour
  • ½ cup ice water

Instructions

  1. Prepare the crust: In a bowl, mix flour and salt. Cut in cold butter until crumbly. Gradually add ice water until dough forms. Chill for at least 30 minutes.
  2. Roll out half of the chilled dough on a floured surface to about a 12-inch circle and transfer to a pie pan.
  3. Make the filling: Whisk together granulated sugar, brown sugar, eggs, bourbon, melted butter, vanilla extract, and salt until smooth.
  4. Stir in chopped pecans and pour the filling into the prepared crust.
  5. Roll out remaining dough and cut into strips for the lattice top; weave over the filling.
  6. Bake at 350°F (175°C) for approximately 50 minutes until set and golden brown.
  7. Allow cooling completely before slicing and serving with whipped cream or vanilla ice cream.
