  • 34 boneless, skinless chicken breasts (approximately 1 pound)
  • 1 cup fresh mushrooms (cremini or button), diced
  • 1 medium onion, diced
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup whole milk
  • 1 tsp baking powder
  • Salt and pepper to taste
  • Oil or butter for cooking
  • For the sauce: ½ cup sour cream
  • 2 tbsp fresh chives, chopped

Instructions

  1. Peel and grate the potatoes, then squeeze out excess moisture using a kitchen towel.
  2. In a skillet over medium heat, cook seasoned chicken breasts until golden brown and cooked through (7-10 minutes). Remove and chop.
  3. Sauté diced onions and mushrooms in the same skillet until soft (about 5 minutes).
  4. In a mixing bowl, combine grated potatoes, chicken, sautéed vegetables, flour, eggs, milk, baking powder, salt, and pepper. Mix until just combined.
  5. Heat oil or butter in the skillet over medium heat. Pour in about ¼ cup of batter for each pancake; cook until bubbles form on top (3-4 minutes), then flip to cook the other side until golden brown.
