Ingredients
- 2 cups grated starchy potatoes (like Russets)
- 3–4 boneless, skinless chicken breasts (approximately 1 pound)
- 1 cup fresh mushrooms (cremini or button), diced
- 1 medium onion, diced
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup whole milk
- 1 tsp baking powder
- Salt and pepper to taste
- Oil or butter for cooking
- For the sauce: ½ cup sour cream
- 2 tbsp fresh chives, chopped
Instructions
- Peel and grate the potatoes, then squeeze out excess moisture using a kitchen towel.
- In a skillet over medium heat, cook seasoned chicken breasts until golden brown and cooked through (7-10 minutes). Remove and chop.
- Sauté diced onions and mushrooms in the same skillet until soft (about 5 minutes).
- In a mixing bowl, combine grated potatoes, chicken, sautéed vegetables, flour, eggs, milk, baking powder, salt, and pepper. Mix until just combined.
- Heat oil or butter in the skillet over medium heat. Pour in about ¼ cup of batter for each pancake; cook until bubbles form on top (3-4 minutes), then flip to cook the other side until golden brown.
