  • 2 tbsp tomato paste
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp brown sugar
  • 2 cups chicken broth (low-sodium)
  • 2 tbsp vegetable oil
  • 1 tsp pimento seeds (allspice)
  • Salt and pepper to taste

Instructions

  1. 1. Sear the Chicken: Heat vegetable oil in a large pot over medium-high heat. Season chicken pieces with salt and pepper, then brown them on all sides.
  2. 2. Add Aromatics: Remove the chicken and sauté chopped onions and minced garlic in the same pot until translucent.
  3. 3. Add Vegetables & Spices: Stir in diced bell peppers, thyme leaves, and pimento seeds until fragrant.
  4. 4. Create Your Sauce: Return the chicken to the pot. Mix in tomato paste, soy sauce, brown sugar, and chicken broth. Stir well.
