  • 2 cups cauliflower florets
  • 4 oz cream cheese (softened)
  • 1/2 cup buffalo sauce
  • 1 cup shredded cheese (cheddar and mozzarella blend)
  • 1/4 cup sour cream
  • 2 green onions (sliced thinly)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Toss cauliflower florets with olive oil, salt, and garlic powder until evenly coated.
  2. Spread the seasoned cauliflower on a baking sheet lined with parchment paper and roast for about 25 minutes until tender and golden brown.
  3. In a food processor, blend the roasted cauliflower, cream cheese, sour cream, buffalo sauce, garlic powder, and paprika until smooth.
  4. Fold in the shredded cheese gently until well incorporated.
