  • 4 ripe tomatoes
  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 1/2 cup buffalo sauce
  • 4 oz cream cheese (softened)
  • 1 cup shredded cheddar cheese
  • 2 green onions (chopped)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the chicken breasts in a large pot over medium heat until no longer pink inside (about 10-12 minutes). Shred the chicken with two forks.
  3. In a bowl, mix shredded chicken with buffalo sauce, cream cheese, half of the shredded cheese, garlic powder, onion powder, salt, and pepper until well combined.
  4. Slice the tops off the tomatoes and scoop out the insides carefully.
  5. Stuff each tomato generously with the buffalo chicken mixture and top with remaining shredded cheese and chopped green onions.
  6. Place stuffed tomatoes in a baking dish and bake for 25-30 minutes until bubbly and golden brown.
