  • 1 cup granulated sugar
  • 1 cup unsalted butter (softened)
  • 2 large eggs
  • 2 tsp baking powder
  • 2 tsp vanilla extract
  • 1 cup confectioners’ sugar (for icing)
  • Food coloring (as desired)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, cream together softened butter and granulated sugar until fluffy. Add eggs one at a time and stir in vanilla.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually combine with wet ingredients to form a soft dough.
  4. Chill the dough wrapped in plastic for at least 30 minutes.
  5. Roll dough to ¼ inch thick on a floured surface; cut into bunny shapes using cookie cutters.
  6. Bake for 8-10 minutes until edges are golden. Cool completely.
  7. Dip lollipop sticks in melted chocolate and insert them into the cookies. Decorate with icing and food coloring.
