  • 1 lb ground chicken
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/2 cup plain breadcrumbs
  • 1/4 cup fresh cilantro, chopped
  • 1 can (13.5 oz) full-fat coconut milk
  • 1/4 cup tandoori masala
  • 1/2 cup tomato puree
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground chicken, minced garlic, grated ginger, breadcrumbs, and chopped cilantro. Mix until just combined.
  2. Roll the mixture into golf ball-sized meatballs and place them on a parchment-lined baking sheet.
  3. Heat oil in a large skillet over medium heat and sear the meatballs until golden brown on all sides (about 6-8 minutes).
  4. Remove excess oil from the skillet and add tomato puree, coconut milk, and tandoori masala. Stir until well combined.
  5. Gently place the seared meatballs into the sauce and simmer on low heat for 15-20 minutes until cooked through.
  6. Drizzle with lemon juice before serving over rice or with naan bread.
