  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 12 oz spaghetti or fettuccine
  • 4 large eggs
  • 1 cup freshly grated Parmesan cheese
  • 4 cloves fresh garlic, minced
  • 1 tsp freshly cracked black pepper
  • 2 tbsp extra virgin olive oil
  • Chopped parsley (optional)

Instructions

  1. Boil salted water in a large pot and cook pasta according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  2. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then cook until golden brown and cooked through (about 6-7 minutes per side). Remove from the skillet.
  3. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  4. In a bowl, whisk together eggs and Parmesan cheese. Gradually mix in reserved pasta water to create a silky sauce.
  5. Return chicken to the skillet along with drained pasta. Pour egg mixture over everything while stirring quickly to coat the pasta evenly.
  6. Top with black pepper and parsley if desired. Serve immediately while hot.
