Instructions

  2. In one bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, blend eggs, melted butter, grated carrots, and vanilla until smooth. Combine with dry ingredients until just mixed.
  4. Fill muffin cups two-thirds full and bake for 20-25 minutes or until a toothpick comes out clean.
  5. Allow to cool completely before frosting with the cream cheese mixture made by beating softened cream cheese with powdered sugar.
