  • 3 cloves fresh garlic, minced
  • 8 flour tortillas
  • 2 cups shredded cheddar cheese
  • 2 cups enchilada sauce (store-bought)
  • ½ cup sour cream

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Season chicken with salt and pepper; cook in a skillet over medium heat for 6-7 minutes per side until golden brown. Shred the cooked chicken with two forks.
  3. In a bowl, combine shredded chicken, half of the cheddar cheese, and enchilada sauce; mix well.
  4. Place a generous scoop of the mixture in each tortilla, roll tightly, and place seam-side down in the baking dish.
  5. Pour remaining enchilada sauce over rolled tortillas and sprinkle with remaining cheddar cheese.
