Ingredients

  • 2 lbs Russet potatoes (peeled and thinly sliced)
  • 2 cups heavy cream
  • 2 cups sharp cheddar cheese (freshly grated)
  • 1 large onion (thinly sliced)
  • 3 cloves garlic (minced)
  • 4 tbsp unsalted butter
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish with butter.
  3. In a skillet, melt 2 tbsp butter; sauté onions for 5 minutes, then add garlic for another minute.
  4. In a bowl, combine heavy cream, salt, pepper, and half the cheddar cheese.
  5. Layer potato slices in the baking dish; pour half of the creamy mixture over the first layer. Repeat with remaining potatoes and cream mixture.
  6. Cover with foil and bake for 45 minutes; remove foil during the last 15 minutes to brown the top.
