  • 2 lbs bone-in chicken thighs
  • 6 cloves fresh garlic, minced
  • 1/2 cup low-sodium soy sauce
  • 1/2 cup white vinegar
  • 3 bay leaves
  • 1 tsp black peppercorns
  • 1 cup water

Instructions

  1. Marinate the chicken: In a bowl, combine soy sauce and minced garlic. Add chicken thighs, coating them well. Let marinate for at least 30 minutes (overnight is ideal).
  2. Sauté aromatics: Heat oil in a large pot over medium heat. Add minced garlic until fragrant.
  3. Brown the chicken: Place marinated chicken skin-side down in the pot and sear until golden brown on both sides.
  4. Simmer: Pour in reserved marinade, vinegar, water, bay leaves, and peppercorns. Bring to a boil, then reduce heat to simmer for about 1 hour until tender.
  5. Reduce the sauce: Remove chicken; simmer sauce uncovered for another 10 minutes to thicken. Return chicken to coat in sauce.
