  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 8 oz cream cheese, softened
  • 1/2 cup sun-dried tomatoes, finely chopped
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh basil, chopped
  • 1/4 cup pine nuts, toasted
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place each chicken breast between plastic wrap and gently pound to about 1/2 inch thick.
  3. In a bowl, mix cream cheese, spinach, sun-dried tomatoes, pine nuts, thyme, basil, salt, and pepper until creamy.
  4. Spread the filling over each chicken breast and roll tightly; secure with kitchen twine or toothpicks.
  5. Heat olive oil in a skillet over medium heat. Sear each roll seam-side down for about 4 minutes per side until golden brown.
  6. Transfer to a baking dish and bake for 25-30 minutes until the internal temperature reaches 165°F (74°C).
  7. Let rest for 5 minutes before slicing into medallions. Serve garnished with fresh herbs.
