  • 1 lb boneless chicken thighs
  • 2 cups basmati rice
  • 2 large onions, sliced thinly
  • 2 tbsp ginger-garlic paste
  • 3 tsp cumin seeds
  • 5 green cardamom pods
  • 4 whole cloves
  • 1 pinch saffron threads
  • 1 cup plain yogurt
  • Salt to taste
  • 2 tbsp ghee or cooking oil
  • Fresh cilantro for garnish

Instructions

  1. Marinate the chicken by mixing yogurt, ginger-garlic paste, salt, and spices in a bowl. Add chicken and let it marinate for at least 1 hour.
  2. Rinse basmati rice under cold water until clear, then soak in water for 30 minutes.
  3. In a large pot, heat ghee over medium heat and sauté sliced onions until golden brown.
  4. Add marinated chicken to the pot and cook until browned on all sides (about 5–7 minutes).
  5. Layer soaked rice over the chicken mixture gently. Pour enough water to cover everything by half an inch and add saffron threads soaked in warm water.
  6. Cover tightly with a lid, reduce heat to low, and simmer for about 30 minutes without lifting the lid.
  7. Garnish with fresh cilantro before serving.
