  • 4 boneless, skinless chicken breasts
  • 8 slices Swiss cheese
  • 8 slices thinly sliced ham
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 3 tbsp Dijon mustard
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Place chicken breasts between plastic wrap and pound to about half an inch thick.
  2. Season chicken with salt and pepper, then layer each breast with ham and cheese.
  3. Roll up tightly from one end and secure with toothpicks or twine.
  4. Dip each roll in beaten eggs, then coat with panko breadcrumbs.
  5. Place in a greased baking dish seam-side down and bake for 25-30 minutes until golden brown and cooked through (internal temperature of 165°F/74°C).
  6. For the sauce, melt butter in a saucepan over medium heat. Stir in heavy cream, Dijon mustard, garlic powder, salt, and pepper until heated through.
  7. Serve chicken rolls drizzled with Dijon sauce.
