  • 1 lb boneless, skinless chicken breasts
  • 4 cups fresh spinach
  • 8 oz fettuccine or penne pasta
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients. Cut chicken into bite-sized pieces and mince garlic.
  2. Heat olive oil in a large skillet over medium heat. Add chicken, season with salt and pepper, and sauté until golden brown (5-7 minutes). Remove and set aside.
  3. In the same skillet, add garlic; cook until fragrant (about 1 minute). Add spinach and stir until wilted (2 minutes).
  4. Pour in heavy cream and chicken broth; simmer gently while stirring in Parmesan cheese until melted. Adjust seasoning as needed.
  5. Add cooked pasta and sautéed chicken back into the skillet; toss to combine thoroughly.
  6. Serve warm, garnished with extra Parmesan if desired.
