  • 3 boneless, skinless chicken breasts (1 lb)
  • 8 oz flat rice noodles
  • 2 large eggs
  • 4 green onions, chopped
  • 1 cup bean sprouts
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp tamarind paste
  • 2 tbsp brown sugar
  • 2 tbsp lime juice

Instructions

  1. Soak rice noodles in hot water for about 20 minutes until tender; drain and set aside.
  2. In a bowl, whisk together soy sauce, tamarind paste, brown sugar, and lime juice to create the sauce.
  3. Heat oil in a skillet or wok over medium-high heat. Cook chicken pieces until golden brown, about 5 minutes.
  4. Add soaked noodles and sauce to the skillet; toss until well coated.
  5. Push mixture to one side and scramble eggs on the other side until cooked through; combine everything.
  6. Stir in green onions and bean sprouts just before serving. Garnish with lime wedges if desired.
