  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup bell peppers (sliced)
  • 1 cup onion (sliced)
  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 tbsp olive oil
  • Salsa or sour cream (for serving)

Instructions

  1. 1. Season chicken breasts with cumin, chili powder, salt, and pepper. Heat olive oil in a skillet over medium heat and cook chicken for 6-7 minutes per side until browned and cooked through.
  2. 2. Remove chicken from the skillet. In the same skillet, sauté sliced bell peppers and onions for about 5 minutes until softened.
  3. 3. Shred the cooked chicken using two forks.
  4. 4. In a clean skillet over medium heat, place one tortilla; sprinkle half with cheese, add shredded chicken and sautéed vegetables, then top with more cheese before folding over.
  5. 5. Cook each quesadilla for 3-4 minutes per side until golden brown and crispy.
  6. 6. Slice into wedges and serve warm with salsa or sour cream.
