- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 large flour tortillas
- 2 cups shredded cheddar cheese
- 1 cup bell peppers (sliced)
- 1 cup onion (sliced)
- 2 tsp cumin
- 2 tsp chili powder
- 2 tbsp olive oil
- Salsa or sour cream (for serving)
Instructions
- 1. Season chicken breasts with cumin, chili powder, salt, and pepper. Heat olive oil in a skillet over medium heat and cook chicken for 6-7 minutes per side until browned and cooked through.
- 2. Remove chicken from the skillet. In the same skillet, sauté sliced bell peppers and onions for about 5 minutes until softened.
- 3. Shred the cooked chicken using two forks.
- 4. In a clean skillet over medium heat, place one tortilla; sprinkle half with cheese, add shredded chicken and sautéed vegetables, then top with more cheese before folding over.
- 5. Cook each quesadilla for 3-4 minutes per side until golden brown and crispy.
- 6. Slice into wedges and serve warm with salsa or sour cream.
