- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 8 oz spaghetti
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup low-sodium chicken broth
- 1 cup bell peppers, chopped
- 1 cup onion, chopped
- 1.5 cups shredded cheddar cheese
- 1 tsp garlic powder
- ½ tsp red pepper flakes (optional)
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Cook the spaghetti according to package instructions until al dente; drain and set aside.
- In a pan over medium heat, heat olive oil and sauté chicken breasts until golden brown on both sides (about six minutes per side). Remove from heat and shred once cooled.
- In a mixing bowl, combine cream of mushroom soup, chicken broth, garlic powder, red pepper flakes, and half of the shredded cheese; stir until smooth.
- In a large bowl, mix cooked spaghetti with shredded chicken and chopped vegetables. Pour the creamy sauce over the mixture and stir gently to combine.
- Preheat oven to 350°F (175°C). Transfer the mixture to a greased baking dish, top with remaining cheese, and bake uncovered for 25-30 minutes until bubbly.
