  • 1 lb boneless, skinless chicken thighs
  • 4 green onions, cut into 1-inch sections
  • 2 tbsp sesame oil
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp sake or mirin
  • 2 tbsp brown sugar
  • 1 tsp fresh ginger, grated
  • 2 garlic cloves, crushed
  • Wooden or metal skewers (if using wooden, soak in water for 30 minutes)
  • 1/4 cup low-sodium soy sauce (for the sauce)
  • 2 tbsp honey or maple syrup
  • 1 tbsp cornstarch (optional)

Instructions

  1. Prepare ingredients: Cut chicken thighs into bite-sized pieces and slice green onions.
  2. Make marinade: Whisk together soy sauce, sake or mirin, sesame oil, brown sugar, ginger, and garlic in a bowl.
  3. Marinate chicken: Place chicken in a resealable bag or bowl; pour marinade over and refrigerate for at least 30 minutes.
  4. Preheat grill: Heat grill to medium-high. Thread marinated chicken and green onion onto skewers.
  5. Grill skewers: Cook for 10–12 minutes, turning occasionally until the internal temperature reaches 165°F (75°C) and charred marks appear.
  6. Baste with sauce: Brush remaining marinade over skewers during grilling for added flavor.
