- 1/4 cup low-sodium soy sauce
- 2 tbsp sake or mirin

- 2 garlic cloves, crushed
- Wooden or metal skewers (if using wooden, soak in water for 30 minutes)
- 1/4 cup low-sodium soy sauce (for the sauce)
- 2 tbsp honey or maple syrup
- 1 tbsp cornstarch (optional)
Instructions
- Prepare ingredients: Cut chicken thighs into bite-sized pieces and slice green onions.
- Make marinade: Whisk together soy sauce, sake or mirin, sesame oil, brown sugar, ginger, and garlic in a bowl.

- Grill skewers: Cook for 10–12 minutes, turning occasionally until the internal temperature reaches 165°F (75°C) and charred marks appear.
