  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup mango puree (fresh or canned)
  • ¼ cup lime juice (freshly squeezed)
  • Zest of 2 limes
  • ¾ cup granulated sugar
  • 2 tsp gelatin powder
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan.
  2. In another bowl, beat cream cheese until smooth. Gradually add sugar and mix until fluffy.
  3. Fold in mango puree, sour cream, lime juice, and zest gently.
  4. Dissolve gelatin in hot water; mix into the filling.
  5. Pour the mixture over the crust and refrigerate for at least 4 hours or overnight.
  6. Remove from pan, garnish with fresh mango slices or whipped cream, and serve chilled.
