- 1 can (15 oz) low-sodium canned chickpeas (drained and rinsed)
- 1 medium sweet onion (finely chopped)
- 3 cloves garlic (minced)
- 1 bell pepper (chopped)
- 1 can (14.5 oz) diced tomatoes
- 2 cups low-sodium vegetable broth
- 2 cups fresh spinach or kale
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp chili powder
- Salt and pepper to taste
- 2 tbsp extra virgin olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and bell pepper. Sauté until softened, about 5 minutes.
- Stir in minced garlic and sliced chorizo; cook until chorizo is crispy, about 3–4 minutes.
- Add drained chickpeas and diced tomatoes with their juices. Stir well to combine.
- Pour in vegetable broth along with cumin, paprika, chili powder, salt, and pepper; bring to a gentle boil.
- Just before serving, fold in fresh spinach or kale until wilted (about 2 minutes).
