  • 2 lbs boneless pork loin
  • 1 cup pork cracklings
  • 1 cup seasoned breadcrumbs
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 3 tbsp olive oil (divided)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Trim excess fat from the pork loin and create a pocket by making a lengthwise incision.
  3. In a skillet over medium heat, sauté onion and garlic in 1 tablespoon of olive oil until translucent (about 5 minutes).
  4. Stir in breadcrumbs, herbs, salt, and pepper; mix well.
  5. Stuff the pork loin pocket with the mixture and pack it tightly.
  6. Rub the outside of the loin with remaining olive oil and season generously with salt and pepper. Press cracklings onto the surface for a crispy crust.
  7. Place the pork in a roasting pan and bake for about 1 hour or until the internal temperature reaches 145°F (63°C). Let it rest before slicing.
