- 2 lbs boneless pork loin
- 1 cup pork cracklings
- 1 cup seasoned breadcrumbs
- 1 medium onion, chopped
- 4 garlic cloves, minced
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 3 tbsp olive oil (divided)
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Trim excess fat from the pork loin and create a pocket by making a lengthwise incision.
- In a skillet over medium heat, sauté onion and garlic in 1 tablespoon of olive oil until translucent (about 5 minutes).
- Stir in breadcrumbs, herbs, salt, and pepper; mix well.
- Stuff the pork loin pocket with the mixture and pack it tightly.
- Rub the outside of the loin with remaining olive oil and season generously with salt and pepper. Press cracklings onto the surface for a crispy crust.
- Place the pork in a roasting pan and bake for about 1 hour or until the internal temperature reaches 145°F (63°C). Let it rest before slicing.
