Ingredients

  • 4 cups all-purpose flour
  • 2 1/4 tsp active dry yeast
  • 1/4 cup granulated sugar
  • 1 cup whole milk (warm)
  • 1/4 cup unsalted butter (melted)
  • 2 large eggs
  • 1 cup fresh or dried cranberries
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp lemon zest
  • 1/2 cup powdered sugar (for glaze)

Instructions

  1. Activate the yeast by combining warm milk and sugar in a bowl. Sprinkle in yeast and let sit until foamy, about 5–10 minutes.
  2. In a large mixing bowl, combine flour, spices, and salt. Add melted butter and eggs to the yeast mixture, then mix until combined.
  3. Knead the dough on a floured surface for about 10 minutes until smooth. Fold in cranberries gently.
  4. Place dough in an oiled bowl covered with plastic wrap; let rise until doubled, about 1 hour.
  5. Punch down the dough, divide into equal pieces, shape into buns, and place on a baking sheet lined with parchment paper. Score crosses on top.
  6. Preheat oven to 375°F (190°C). Let buns rise again for 30 minutes before baking for 20–25 minutes until golden brown.
  7. Brush warm buns with glaze made from powdered sugar and lemon juice.
