  • 1 lb boneless, skinless chicken breasts (about 34 pieces)
  • 8 oz fresh cremini or button mushrooms, sliced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 cup sour cream
  • 2 tbsp all-purpose flour
  • 1 tsp Dijon mustard
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Chop the onion and garlic, and slice the mushrooms.
  2. In a large skillet over medium heat, add olive oil. Season diced chicken with salt and pepper and cook until golden brown on all sides (5-7 minutes). Remove and set aside.
  3. In the same skillet, add onions and sauté until translucent. Add garlic and mushrooms; cook until mushrooms are tender.
  4. Sprinkle flour over veggies and stir well. Gradually add chicken broth while stirring continuously until thickened.
  5. Reduce heat to low; stir in sour cream and Dijon mustard. Return chicken to the skillet and coat in sauce.
  6. Plate the stroganoff over prepared noodles or rice; drizzle with extra sauce.
