- 1 lb boneless, skinless chicken breasts (about 3–4 pieces)
- 8 oz fresh cremini or button mushrooms, sliced
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 1 cup sour cream
- 2 tbsp all-purpose flour
- 1 tsp Dijon mustard
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Chop the onion and garlic, and slice the mushrooms.
- In a large skillet over medium heat, add olive oil. Season diced chicken with salt and pepper and cook until golden brown on all sides (5-7 minutes). Remove and set aside.
- In the same skillet, add onions and sauté until translucent. Add garlic and mushrooms; cook until mushrooms are tender.
- Sprinkle flour over veggies and stir well. Gradually add chicken broth while stirring continuously until thickened.
- Reduce heat to low; stir in sour cream and Dijon mustard. Return chicken to the skillet and coat in sauce.
- Plate the stroganoff over prepared noodles or rice; drizzle with extra sauce.
