  • 12 oz pasta (spaghetti or fettuccine)
  • 45 cloves fresh garlic, minced
  • 1 can (14.5 oz) diced tomatoes with juices
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • Fresh basil for garnish

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water, then drain.
  2. In a large skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1 minute).
  3. Stir in diced tomatoes and simmer for 5 minutes.
  4. Lower heat and gradually add heavy cream, stirring until slightly thickened (about 5 minutes). Adjust thickness with reserved pasta water if needed.
  5. Combine cooked pasta with the sauce and stir in Parmesan until well mixed.
  6. Serve hot, garnished with additional Parmesan and fresh basil.
