  • 200g Dan Dan noodles
  • 250g ground pork (or turkey/tofu)
  • 2 tbsp creamy peanut butter (natural)
  • 1 tsp Sichuan peppercorns
  • 2 tbsp chili oil (adjust to taste)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar (unseasoned)
  • 2 cloves garlic (minced)
  • 2 green onions (sliced for garnishing)
  • 30g chopped peanuts (for topping)

Instructions

  1. Prepare your ingredients by chopping green onions and mincing garlic.
  2. In a large skillet over medium heat, cook the ground pork until browned and crispy, about 5 minutes.
  3. In a bowl, mix peanut butter, soy sauce, rice vinegar, chili oil, minced garlic, and Sichuan peppercorns until smooth.
  4. Cook the Dan Dan noodles according to package instructions until al dente; drain and reserve some pasta water.
  5. Add drained noodles to the skillet with cooked pork; pour over the sauce and toss until well-coated.
  6. Serve in bowls topped with chopped peanuts and sliced green onions; drizzle extra chili oil if desired.
